Our homemade gluten free apple pie has a flaky and buttery crust that will SHOCK people. It also has the best layered apple center like a traditional pie you remember but without the gluten.

I have never been a big apple pie gal. I love the cream pies and this razzleberry pie so much that I didn't feel the need to tackle this. However, once I did, I was AMAZED at how delicious and stunning it was. I served it at my Nancy Meyers meets Norman Rockwell monthly Thanksgiving dinner party and everyone (none of whom are gluten free) were raving about it.

Let's talk about why you are going to love it
- Homemade but not to hard - While this is a from scratch pie, it is surprisingly simple to make. We made the filling with just a few ingredients so it only takes minutes to make. The pie crust also comes together quite quickly, just dry ingredients then frozen butter and wet ingredients.
- The flakiest, most buttery crust - This pie crust came was a slight change from my mom's famous gluten free pie crust. I just made it slightly easier with gluten free all purpose flour but it is still so good! She was 11 when she started making pies at the local home town cafe so she truly is the pie queen. Adding the frozen butter in small grates ensures that you get buttery pockets throughout the entire pie crust just like with our gluten free pecan pie without corn syrup or grandma's gluten free pumpkin pie.
- The most gorgeous presentation - After making this pie, I honestly felt like a domestic goddess! Or like a grandma who knows her way around an apple pie. My non-gluten free husband said it was so delicious and I honestly think it is the combo of homemade crust and filling. I've had the store bought crusts and they don't even come close to this.

Key ingredients for the best gluten free apple pie
- Butter - Oh yes, it makes the filling and the pie crust amazing! I have been used dairy free butter and it worked great. Just make sure it is frozen.
- Granny Smith apples - I find that the tartness of these apples blend so well with the sweet snd spice filling to masker the best pie.
- Lemon juice and apple cider vinegar - These both help with the filling balance of tartness and that same tang you want in a pie crust
- Arrowroot starch - This gives the pie crust the best texture and flavor. My non gluten free husband said this was a delicious and buttery, flaky crust.

Homemade Gluten Free Apple Pie with Flaky Crust

Ingredients
- 8 medium apples peeled, cored and thinly sliced
- 1 tablespoon lemon juice
- ยพ cup sugar
- ยผ cup cornstarch
- 1 teaspoon cinnamon
- ยผ teaspoon nutmeg
- 2 tablespoons butter
Gluten-free pie crust
- 2 ยฝ cups gluten free all purpose flour
- ยฝ cup arrowroot starch
- 1 teaspoon xanthan gum
- 1 teaspoon salt
- 2 tablespoons sugar
- 1 cup butter, frozen (dairy free works was well)
- 2 tablespoons buttermilk (dairy free works was well)
- 1 egg, beaten
- 1 tablespoon apple cider vinegar
- 3-4 tablespoons ice water
Instructions
- Preheat oven to 350ยฐ
- Prepare apples and toss with lemon juice to keep from browning then pat dry with paper towels
- Add sugar, cornstarch, cinnamon, nutmeg and toss to coat the apples
- Make the bottom pie crust with instructions below
- Fill bottom pie crust with the apple mixture snd the two tablespoons of butter
- Repeat directions below but cut into strips and layer in a lattice on top of the filling and brush with heavy cream or melted butter and sprinkle with sugar
- Bake at 350 degrees for 45-50 minutes
Gluten free pie crust
- Mix dry ingredients together in a stand mixer then grate in frozen butter
- Add egg, buttermilk, vinegar and mix together
- Add ice water one tablespoon at a time until the dough comes together and is nice and smooth
- Place plastic wrap on the counter and add half of the dough and dust with gluten free rice flour or gluten free all purpose flour then roll out the dough in circular motions until you get a circle the size of your pie pan
- Place your pie pan upside down over top and invert the crust from under the plastic wrap and reposition as needed

My gluten free flour already contains xanthan gum. Do I ask have to add 1 tsp on top of that?
