Cinnamon roll French toast casserole is one of my new go-to breakfasts. It is a breeze to make in just 30 minutes and can be made right in the Instant Pot saving you oven space for another great recipe like our gluten-free breakfast casserole.

Whether for brunch or breakfast for dinner, this cinnamon roll french toast bake is sure to become a family favorite. It is cooked and served right up in its casserole dish reducing the number of dishes you have to do as well…score!

Thank you to Canyon Bakehouse for sponsoring this recipe

Cinnamon Roll French Toast Casserole Recipe

Oh my goodness, if you love our gluten-free cinnamon rolls, then you are going to want to eat this Instant Pot cinnamon roll French toast casserole right up! It’s an easy recipe that everyone will love.

This dish is made with my favorite Canyon Bakehouse bread that is so soft and flavorful. I love that you don’t have to use stale bread for this recipe so you can literally wake up and feel like this meal and make it in under 30 minutes.

While I used their 7-grain bread variety, you can easily use the mountain white, ancient grain, cinnamon raisin, mountain white, honey oat or Hawaiian sweet breads. Any of them work great in this recipe!

I love making up our original recipe, gluten-free cinnamon roll dough but it can be more of a labor of love. This is a simple recipe that uses simple ingredients.

It is as good the next morning as it is right when it is made and the whole family will love it. Top with maple syrup (if you don’t have any here is a substitute for maple syrup list of 10 options).

Are cinnamon rolls breakfast or dessert?

That is the great debate isn’t it? While cinnamon rolls are traditionally eaten for a decadent Christmas breakfast great with our gluten-free eggs Benedict casserole or school breakfast pizza plus, they are great as a dessert as well.

When you make up this dish, you can serve it up as a dessert or a breakfast. You decide. It tastes like homemade cinnamon rolls without all the work.

The cream cheese icing is topped at room temperature and is the perfect drizzle that makes this breakfast bake feel like a special occasion meal. While we love this cinnamon roll casserole recipe during the holiday season, it is a simple recipe that can be enjoyed anytime.

How to make cinnamon roll French toast casserole

    • Start by cutting 7 pieces of gluten-free bread into cubes and place in a 4 cup glass container
    • In a measuring cup, whisk 3 eggs
    • Add 1/3 C milk, 1/4 C brown sugar, 1 tsp cinnamon, 1/8 tsp salt, 1/8 tsp. allspice and 1/4 tsp. fresh ground nutmeg
Step by step cinnamon roll French toast casserole
    • Whisk well and pour over the bread
    • Top with 3 T chopped butter (make sure it isn’t melted butter)
    • Add 1/4 C brown sugar and 1/4 C chopped pecans
    • Cover with aluminum foil and place on a trivet in the Instant Pot
    • Add 1 C water to the pot and cook on manual for 26 minutes followed by natural release
    • In a mixing bowl, combine 2 T butter, 1 tsp. gluten-free vanilla extract and 2 oz. cream cheese
step by step cinnamon roll French toast casserole
    • Add 2 C powdered sugar and mix well
    • Place frosting in a piping bag, cut a tip in the bottom and drizzle on the cooked French toast casserole
    • Serve everything nice and hot

Can you make it in the oven?

Absolutely! You can cook this cinnamon roll casserole French toast recipe up for about 40 minutes at 350 degrees or until a toothpick comes out clean from the center.

Since we use the the instant pot, you don’t have to heat up your house or think about oven temperature. While having an instant pot is initially an extra cost, it is so worth it. We make things instant pot spaghetti, gluten-free Mac and cheese, instant pot jasmine rice, instant pot broccoli cheddar soup and even instant pot pasta in it and they all turn out great!

What goes good with cinnamon rolls?

If you want to go all out on decadent breakfast dishes, our gluten-free pancakes or gluten-free waffles are a great addition.

    Can you store leftovers easily?

Leftovers of this delicious casserole can be stored in an airtight container in the refrigerator for up to 3 days. Or you can just cover the dish with plastic wrap and refrigerate as well.

Just heat in the microwave before serving again. Then drizzle with more cream cheese frosting.

Delicious! Made it for Christmas morning. My gluten-free family enjoyed this decadent treat. Next time, I might use half the brown sugar and frosting.

This might be a silly question, but if I’m making it in an oven and only have 8×8 or 9×13 pans, would the same measurements work or should I double it? Looking forward to making this- sounds so delicious!

8×8 would work but for a 9×13 I would double it. Enjoy! ๐Ÿ™‚

Does the dish have to be glass, or can a metal baking pan be used (assuming it fits in the IP)? I am new to instant pots and not sure what can and cannot be used inside one.

You can use any container that is labeled oven safe. Hope that helps ๐Ÿ™‚
