Green Chile Rice
This delicious dish packs a bunch of flavor in one super quick recipe! I love that it is great as a side dish to your favorite Mexican main dish like our baked bean nachos or great with classic meats like this BEST roast chicken recipe.
Or, simply add cooked chicken, pork, beef or beans to the mix and you have a full protein packed one pan meal. We love one pan meals!
This dish really couldn’t be easier and even your kids could get in the kitchen and help you make it. We use Maya Kaimal’s Organic Surekha Rice in the Perfectly Plain variety since it is already cooked and we just have to warm it up with a few more ingredients.
This rice is fantastic on it’s own, made into this recipe or served up with our vegan tikka masala with roasted vegetables. Organically grown in South India, it’s nutritionally closer to brown rice than white rice because of the ancient technique of ‘parboiling’. The grains get boiled in their husks to lock in nutrients and fiber.
Holiday Rice
I love making any kind of rice and beans but during the holidays, this rice is especially festive! It is fun to serve with gluten-free homemade tamales from The Spruce Eats and pozole for a traditional Mexican Christmas dinner.
It’s also great when served up with our cream cheese roll ups party pinwheels since they are also speckled with that red and green holiday flair.
How to make green Chile rice
- Start by emptying one package of Maya Kaimal’s Organic Surekha Rice in the Perfectly Plain variety into a medium skillet
- Add 1 T water
- Next, add 1 can of diced green chilies
- Place 1/4 cup diced, fresh red peppers into the pan with 1-2 tsp. salt (depending on your preference)
- Add in 1 tsp. cumin and 3 T butter and simmer for 3-5 minutes over medium heat
- Top with 1/2 cup shredded cheddar or pepper jack cheese and let melt 1 minute over the rice
- Serve everything hot with fresh chopped cilantro
Can you store leftovers easily?
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Just heat on the stovetop or in the microwave before serving again.

- 8.5 ounces rice
- 1 tbsp water
- 1 can diced green chiles
- 1/4 cup red peppers
- 1-2 tsp Real Salt
- 1 tsp cumin
- 3 tbsp butter
- 1/2 C cheddar cheese
Instructions
