    Pizza Grilled Cheese Monster Sandwich

    This pizza grilled cheese sandwich is a delicious twist on a typical grilled cheese sandwich. Pizza and grilled cheese are the ultimate comfort foods, so this easy recipe is the best.

    The kids are going to love the whimsy and fun of opening up this pizza grilled cheese in the lunchroom. It is both fun and delicious. The kids will be so excited to take their home lunch to school.

    This pizza grilled cheese monster is going to be any kids favorite lunchbox sandwich! They are going to love the whimsy and fun of opening this up in the lunchroom to a funny face. We love using Canyon Bakehouse bread because it is so tasty that nobody would ever know it is gluten-free. AD

    Grilled cheese, also known as cheese melts, is a classic sandwich that I absolutely love. I had so much fun making this pizza grilled cheese for my littles. Seeing the excitement on their face was all I needed to know I had a lunchbox hit!

    We love using Canyon Bakehouse bread because it is so tasty. Truly with this bread, nobody would ever know it is gluten-free. It is my absolute favorite gluten-free bread! It is just as delicious right off the counter as it is toasted and lathered in butter.

    There aren’t too many GF breads out there that you can enjoy right out of the bag. Canyon Bakehouse breads are soft, fluffy and full of flavor that everyone will love. The best part is that you can’t even tell it is gluten free!

    I love how versatile their breads are too. They can be used for savory sandwiches or for making sweet french toast. We use them in our Gluten-Free French Toast Bites!

    This is a simple bento box lunch that will put a smile on your little ones face. It really doesn’t take too long to make and I bet they will ask for it again and again. Include some fresh fruit, more veggies (like carrot sticks) and a cute little lunchbox note for a complete lunchbox experience.

    What you need

    This delicious sandwich is super easy to make! A grilled cheese sandwich is an American classic, so mix it together with pizza and you have the perfect sandwich. My kids love how tasty it is and love how cute it is.

    Gluten-Free White Bread

    The key to a great sandwich is the type of bread you use. If you do not have delicious bread, then the sandwich is going to be a flop. It is important to use the best bread out there to make grilled cheese sandwiches.

    Luckily for you, I have found the best gluten-free bread ever. Canyon Bakehouse is my favorite gluten-free bread. For this recipe, it is best to use their regular white bread, but you could use golden wheat or whole wheat bread too.

    You can also use homemade bread if you desire. Baking with gluten-free flour can be tricky though, so be sure to check out my Gluten-Free Flour and Starches post to learn everything you need to know about gluten-free flour.

    Seedless Cucumber and Olives

    To make the cute eyes, you will need a seedless cucumber and some olives. I love these because one, they are super cute, and two, I know that I am encouraging healthy eating for my kids. The key to getting your kids to eat their vegetables is to sneak them in their food, or so I’ve learned.

    Pizza Sauce

    To make this pizza grilled cheese recipe, you need pizza sauce. It is important to buy pizza sauce rather than marinara sauce (they are not the same) because marinara sauce is thinner than you need for this recipe. The pizza sauce makes grilled cheese sandwiches into pizza sandwiches!

    Top tip: Add your favorite pizza toppings to customize your yummy sandwich!

    How to make it

    • Toast your bread and butter side of each slice of bread
    • Place the first untoasted side up on a plate
    • Top with 1 slice of mozzarella and 2 slices of pepperoni
    • Lather on remaining pizza sauce and top with 1 slice of cheddar cheese
    • Broil, toast, or microwave until cheese is melted slightly and bread is golden brown
    • Slice the sandwich on a diagonal into two
    • With remaining slices of mozzarella cheese cut into 6 “teeth” rectangles
    • Place final slices of pepperoni on top of melted cheese and pepperoni on each side of the sandwich
    • Top with remaining toast after cutting it into half on the diagonal with the buttered side up
    • Top each sandwich with a bit of garlic salt
    • Place cheese “teeth” up under the top slice of bread
    • Place the cucumber discs and olives on top for “eyes”

    What type of cheese is best for pizza grilled cheese?

    You can use whatever cheese you prefer, but for a classic pizza grilled cheese, you will want to use mozzarella cheese and cheddar cheese. American cheese works too. All of these cheeses mixed together will make a gooey cheese sandwich that will make your taste buds dance.

    Could I use mayo instead of butter?

    Yes, you could, but I find that butter works better with the recipe. At the end of the day, it is all up to whatever you prefer.

    How to store the leftovers?

    Let the sandwich cool to room temperature before putting it in an airtight container. Place a paper towel in with it, as it will keep the sandwich from getting soggy. It will last up to four days in the refrigerator.

    How to reheat the leftovers?

    You can reheat a grilled cheese sandwich in a few ways. One, you could heat it up in the microwave (but I do not recommend this way). Two, you could reheat it in the air fryer (my preferred way). Three, you could wrap the sandwich in tin foil, place it on a cookie sheet, and reheat it in the oven. Or four, you could reheat it on a pan on the stove.

      My kids loved these!I added peppers and sausage to mine and then dipped in marinara sauce for a more grown-up version. Delicious!
