These Rudolph reindeer pancakes are both whimsical and tasty. I know that this festive breakfast will make your Christmas morning even more special like it did for ours. Plus, they only take 20 minutes to make this magic!

Let's talk about why you (and the kiddos) will love them
They are just so festive! I think these reindeer pancakes are the perfect way to kick off the holidays while watching the classic Rudolph in pj's. The candy eyes and nose add the perfect touches. I have also come up with chocolate and candy cane topped Christmas pancakes and festive gingerbread pancakes to get into the spirit of the season.
Party ready: Decorating these pancakes are so fun for a party activity served up with our Christmas charcuterie board and candy cane Christmas mocktails! It doubles as the food AND activity.
New tradition approved: These festive reindeer pancakes are such an easy recipe that you and your family will love to make together. And they make an awesome new tradition to start. I know because we did this years ago and now the kids ask for them every single year!

Here is What you need
Gluten-Free All Purpose Flour
Finding a quality gluten-free flour can be a hard task. Luckily, we found Pamela's Products! They are the first products we used after I was diagnosed with celiac disease and they are still some of our very favorite. For this recipe specifically, it is what I recommend.
The flavor is so delicious. I have actually had people ask me what makes our pancakes so delicious when I use this Pamela's Baking and Pancake Mix. You can make them straight out of the bag as is or you can jazz them up like we did in our reindeer pancake recipe above.

Candy
We use candy to decorate the reindeer Christmas pancakes. M&Ms and marshmallows make the perfect reindeer eyes and a red candy makes the nose red nosed reindeer.
If your kids like these pancakes, they will LOVE these Reindeer Cookies as well. Who doesn't love fun Christmas cookies?
Helpful tips we have learned along the way...
#1: Overmixing the batter can cause flat pancakes, so make sure you are not stirring too much. It's okay if there are small lumps. They won't show up in the cooked pancakes.
#2: If you are in a rush, microwave pre cooked bacon works just fine.

20-Minute Reindeer Pancakes (so cute!)

Ingredients
- 1 package of bacon
- 2 cups gluten-free all-purpose flour
- 2 large eggs
- 1 ½ cups milk
- 1 Tablespoon oil
- ¼ teaspoon peppermint extract
- 1 cup mini marshmallows
- marshmallows and M&M's for eyes
- red candy for noses I like gummy candies
Instructions
- For the bacon antlers, preheat oven to 350° then place bacon on a baking sheet and bake 20 minutes or until cooked through
- For the pancakes, combine all ingredients minus the marshmallows and candies and mix well
- Gently stir in 1 cup of marshmallows
- Cook a large circle (6" diameter) and two small circle for the nose and ears (2-3" diameter) on a greased griddle or frying pan, continue until all batter is cooked
- Assemble the pancakes by placing the big pancake down first then top with one mini pancake
- Gently tear of two edges of the other mini pancake and place like ears on the top of the large pancake
- Place bacon for antlers on each reindeer head
- Stick M&M's in marshmallows and place on the pancake for eyes and add a red candy on the mini pancake nose to complete your reindeer pancakes
Notes
How to store leftovers?
Let the pancakes cool to room temperature, then put them in either a plastic bag or airtight container. Keep them in the fridge for up to four days!Nutrition
