Gluten-Free French Toast Casserole
I love making gluten-free French toast bites but when I want to prep something the night before, for breakfast the next day, this gluten-free French toast casserole is absolutely the way to go. It is as simple and delicious to make as our gluten-free breakfast casserole with hashbrowns and sausage.
It’s perfect for preparing on Christmas Eve for a fantastic Christmas Day breakfast. It also works great on other holidays like Easter or even when you need to mix up your morning meals during the week.
Gluten-Free Bread
Any gluten-free bread works for this recipe but Canyon Bakehouse is the only GF store brought bread we trust and buy. It’s the same bread we use to make our delicious cinnamon roll French toast casserole in the Instant Pot and our gluten-free eggs Benedict casserole. It works so well in recipes!

Sugared Cranberries
The sugared cranberries add a nice bit of holiday decadence to this gluten-free French toast casserole. Surprisingly, they are so easy to make as well!
They are great with meals like our gingerbread pancakes (that’s also where we show you exactly how to make them) but also great on mocktails especially our Christmas mocktails. They are also great with our Prosecco drink with pomegranates and cranberries.

How to make gluten-free French toast casserole
Step one: Cut gluten-free bread (Canyon Bakeouse works great) into cubes
Step two: Melt butter in 9×13 pan then sprinkle with brown sugar
Step three: Top with half the cranberries
Step four: Evenly spread bread cubes on top of the cranberries
Step five: Pour egg mixture over bread cubes and press down so each is submerged at least for a minute
Step six: Sprinkle with remaining cranberries and some white chocolate chips
Pro Tip: Add another layer of white chocolate chips right when the casserole comes out of the oven for extra decadence and a beautiful presentation
Can this be made dairy-free?
This can definitely be made gluten-free! Simply use dairy-free (I recommend full fat, canned) coconut milk and dairy-free butter. Also, be sure to use dairy-free white chocolate chips.
How do you store leftovers?
Simply cover with aluminum foil and refrigerate leftovers. No need to dirty another dish, plus it will make reheating a breeze!
How do you reheat French toast casserole?
To reheat, leave the tinfoil on and bake until warm at 350 degrees. It takes about 10 minutes. You can also heat it up in the microwave. Sprinkle with more fresh white chocolate chips once it’s heated up and ready to serve again.

Ingredients
- 1/4 C butter, melted
- 1 C brown sugar
- 1 C fresh cranberries, divided
- 1/2 C white chocolate chips, divided
- 1 loaf gluten-free bread
- 2 C milk
- 6 eggs
- 1 tsp gluten-free vanilla extract
- 1/4 tsp allspice
Instructions

With the exception of the cranberries, this recipe uses common ingredients that most of us keep in our cupboard anyway. Good recipes need simple and readily available ingredients, and this recipe meets that.
