    I wanted a recipe that was not only easy but also comforting, like our easy Instant Pot meatballs or creamy mac and cheese. The Mississippi Chicken checks all the boxes. Itโ€™s a dish that feels special without spending hours in the kitchen. Plus, using the Instant Pot means itโ€™s ready in no time, making it perfect for busy weeknights or relaxed Sunday dinners.

    Chuck Roast: If youโ€™re looking for a richer, more indulgent version, chuck roast is an excellent choice. However, cooking a chuck roast will take longer to cook in the Instant Pot. The end result is a melt-in-your-mouth, savory delight.

    What you’ll need

    • Skinless Chicken Breast or Tenders: Fresh or frozen will work.
    • Sliced Pepperoncinis: Or banana peppers, including the juice.
    • Brown Gravy Mix: Gluten-free if needed, or au jus mix.
    • Unsalted Butter
    • Ranch Dressing Mix: For that classic Mississippi Chicken flavor.
    • Creamy Balsamic Dressing: Adds a unique, delicious twist.

    How to Make Mississippi Chicken in the Instant Pot

    Place Chicken in the Pot: Lay the chicken breasts or tenders at the bottom of the Instant Pot.

    Add Ingredients: Pour the sliced pepperoncinis (with juice), brown gravy mix, butter, ranch dressing mix, and Balsamic Dressing over the chicken.

    Cook: For fresh chicken, set the Instant Pot to cook for 10 minutes with a natural release. For frozen chicken, cook for 15 minutes.

    Shred and Serve: Once cooked, shred the chicken with forks and mix with the sauce. Serve over your choice of rice, mashed potatoes, or cauliflower rice.

    Can I make this in a slow cooker?

    Yes, place the chicken at the bottom of the slow cooker, add all other ingredients on top, and cook on low for 6-8 hours. Shred and serve as usual.

    What to serve with Mississippi Chicken

    Mississippi Chicken is a versatile dish that pairs well with a many different sides. Here are some of my favorite side options to complement the rich and savory flavors:

    Fluffy mashed potatoes or instant pot jasmine rice perfectly soak up the juices and provide a satisfying base. For the ultimate comfort meal, serve over homemade egg noodles.

    If you’re looking for a low carb option, cauliflower rice, steamed veggies, or a salad make great side dishes as well. But if you’re like me and like to load up on carbs, homemade garlic bread, crescent rolls, or dinner rolls are more great options.

    Storing instructions

    Storing: Store leftovers in an airtight container in the fridge for 3-4 days. It’s best to wait until the chicken is completely cooled before storing.

    Reheating: Reheat leftovers in the instant pot on the saute function or in the microwave. I think leftovers sometimes taste better because the flavors have had time to deepen.

    Ingredients

    • 2 pounds Skinless Chicken Breastย or tenders
    • 1/2 jar Sliced Pepperoncinis or Banana Peppers work too WITH JUICE
    • 1 packet Brown Gravy Mix (I used gluten-free) or au jus mix
    • 4 tablespoons Unsalted Butter 8 tablespoons if not using the dressing
    • 1 packet Ranch Dressing Mix
    • 1 bottle BRIANNAS New American Creamy Balsamic

    Instructions

    • Place chicken on the bottom of the pot
    • Add remaining ingredients on top of the chicken
    • For fresh chicken which we recommend, cook time of 10 minutes with a natural release and for frozen chicken, you will cook it for 15 minutes
    • Once youโ€™ve let is release naturally, open the lid, shred the chicken and serve

      I am an IP newbie and wanting to make this. Is there other liquid that needs to be added? Or does the dressing count as the liquid?

      I love anything in the Instant Pot just for the sheer ease of it! But this truly is a great recipe I couldn’t wait to try, and I was not disappointed! I really loved the flavor of it and my family did as well. Will def be adding this to the menu on a regular basis!
