When I think of summer, I think of fresh fruit. I especially think of strawberries. Nothing screams summer more to me than sipping on a yummy strawberry drink in the warm sun. Bonus points if I am by the pool.
My virgin strawberry margarita usually does the trick, but sometimes I want to switch it up and have a drink, rather than a frozen drink. The strawberry mocktail is another great one but I just love messing around with new recipes so this was born.

The fresh ingredients take this drink to the next level and will have you making the next batch before you realize it. You can thicken the drink a bit with fresh strawberry coulis.
Strawberry Simple Syrup
To get the sweetness of the strawberry flavor, you need our strawberry simple syrup. Simple syrup can be added as much or as little as you want, depending on the sweetness level you desire. Mixed with fresh strawberries, this simple syrup creates the perfect strawberry flavor.
We use simple syrups in our mocktails all of the time. We have a plain simple syrup recipe, but we also have many other flavors, like blackberry, raspberry, and even jalapeรฑo! Hey, don’t knock it until you try it.
Non-Alcoholic Rum
To give this strawberry mocktail recipe its mocktail taste, you need non-alcoholic rum. For the alcoholic drink, the recipe usually calls for white rum, but for a mocktail, you will use non-alcoholic rum. Yup, it’s a real thing and it’s also great in our Virgin Mojito Recipe in 5 minutes.
When you are purchasing anything labeled “non-alcoholic,” make sure you are looking for a 0.0% ABV (alcohol by volume). Some non-alcoholic beverages contain some alcohol (no more than 0.5% ABV), so you will want to make sure you are buying the kind that has no alcohol at all. We really like the Ritual brand for this recipe.
Club Soda
Club soda makes this refreshing virgin strawberry mojito a bubbly drink. You will find recipes that call for lemon-lime soda, but I find that a classic club soda doesn’t mess with the strawberry virgin mojito flavor.
How to make it
- Place mint leaves and 1/2 lime cut into two wedges into a tall, sturdy glass or pestle and mortar and muddle to release oils in the mint and lime juice from the lime wedges (if using a pestle and mortar, move the leaves and juice to your serving glass)
- Add 3 sliced strawberries and gently muddle again
- Fill the glass to the top with ice and add the simple syrup and non-alcoholic rum (if using) then fill with club soda
- Stir and add more simple syrup if you like it sweeter

Strawberry Mojito Mocktail
Ingredients
- 8 fresh mint leaves
- 1 ounce fresh lime juice (about 1 medium lime)
- 1 to 1/1/2 ounce strawberry simple syrup (depending on sweetness you like, add more or less, regular simple syrup works as well)
- 3 large sliced strawberries, plus one more for garnish
- 2 ounces non-alcoholic 0.0% rum (optional) Ritual works great
- 4 ounces club soda Topo Chico is the best
- Garnish: fresh lime

I love the limes in this drink because they really enhance the flavor. I am a huge cherry limeade girl, but I’ve never thought of mixing up strawberry and limes! I will definitely make this drink again ๐
