The ingredients
- Pancakes – I love making small gluten-free pancakes or oat flour pancakes but you can make traditional buttermilk pancakes. Feel free to swap for small waffles as well.
- French toast – Sourdough french toast is my go-to but these french toast bites also look adorable spread throughout this brunch board.
- Meat – You can use instant pot bacon, air fryer sausage, or breakfast ham on this board. Or, to make this a vegetarian board, omit the meat all together.
- Eggs – I like to make a big batch of fluffy, scrambled eggs. They bring so much texture to the board as well as a bright, yellow color.
- Fruit – Use whatever seasonal fruit you like best. Fresh strawberries, blueberries, raspberries, etc. always look great and taste amazing.
- Sweets – Just for fun, I like to add chocolate chips and marshmallows. They pair well with the pancakes and the kids love them.
- Spreads – Two small jars of jelly, jam, or another spread like peanut butter adds another layer of texture to this recipe.
Can I customize this board for dietary preferences?
Yes you can add, swap, or omit ingredients for dietary preferences and/or food allergies. I like to make this breakfast platter completely gluten-free but you can cater to many different dietary needs.
Feel free to add more of your favorite foods as well. Mini cinnamon rolls, hard-boiled eggs, donut holes, mini muffins, and mini bagels are just a few more brunch classics. The options for your breakfast spread are practically endless.

Orange juice, tea, coffee, and virgin mimosas are excellent choices. If you’re serving kiddos, I recommend chocolate milk as well.
Storage
Storing – Although it depends on the item, ingredients can be stored in airtight containers in the fridge at for a couple of days. But, mini pancakes and fresh toast tend to taste best fresh.
Freezing – You can freeze leftover pancakes and french toast if desired. I would not recommend freezing anything else.
